Simple Cabbage and Sausage Skillet

1 wooden spatula or other utensil to stir
Ingredients

olive oil or bacon grease

package of smoked or kielbasa sausage, sliced
1/2
pound
bacon, cooked and chopped
1
medium onion, chopped
1/2
green pepper, chopped
1
medium head of cabbage, chopped
3
cloves garlic, chopped
salt and pepper to taste
a pinch of red pepper flakes, optional
Instructions
Heat oil or grease in a large skillet over medium heat. Add sliced sausage and cook until brown on both sides. Remove from skillet and set aside.
In the same skillet, add onion and green pepper and cook until they soften. Toss in garlic and stir for another minute.
Add chopped cabbage to the skillet, stirring occasionally, until cabbage is tender and slightly caramelized. This usually takes 10-15 minutes.
Return the sausage to the skillet, stir everything together, and season with salt, pepper, and red pepper flakes if you like a kick.
Serve warm with a slice of cornbread or homemade bread.
