The Crockpot Meals I Actually Like (From Someone Who Usually Doesn’t)

I’ll just say it upfront: I am not a crockpot superfan.

I want to love it. I really do. In theory, throwing everything in a pot and coming back to dinner magically finished sounds like a dream. In reality? My crockpot meals usually turn out dry, oddly flavored, or somehow still not done when it’s time to eat.

So if you’re someone who feels personally betrayed by your crockpot on a regular basis, you’re my people.

That said… there are a handful of meals that never let me down. These are the ones I keep coming back to because they’re forgiving, flavorful, and actually turn out good every time.

Mississippi Roast

This one deserves all the hype.

I don’t mess with it much because it truly doesn’t need help. A good chuck roast, ranch seasoning, au jus gravy mix, butter, and pepperoncini peppers. That’s it. It turns out tender, flavorful, and hard to mess up, which is saying a lot coming from someone who usually messes crockpot meals up.

We serve it over mashed potatoes or on sandwich buns, and it’s one of those meals everyone eats without complaining.

Chicken Taco Meat

I stumbled on this recipe one summer when my girls and I were home all summer. I wanted something taco-y and just threw stuff in and this is what I came up with. This is my go-to for lunches at home during the week. My husband is not a huge chicken fan, so if my girls and I are at home, I love fixing this.

Boneless chicken breasts or thighs, taco seasoning, a little salsa, and that’s all it takes. It shreds easily and works for so many meals, tacos, burrito bowls, quesadillas, or even thrown on a salad.

The key for me is not overcooking it. As soon as it shreds easily, it’s done. Any longer and it’s ruined. Because who likes dry chicken?

Bone-In Chicken Thighs

Bone-in chicken thighs are basically crockpot insurance.

This is another recipe where I just threw everything in one day and hoped for the best. and it worked out great!

They stay juicy, they’re hard to overcook, and they actually taste like something when you’re done. I season them simply, salt, pepper, garlic, maybe a little paprika. If I’m feeling fancy, maybe a little parsley. Then let them cook low and slow.

These are perfect for nights when I want something comforting without thinking too hard about it.

Taco Soup

If there’s one crockpot meal I fully trust, it’s this soup.

Taco soup is especially forgiving. Ground beef, beans, corn, tomatoes, taco seasoning; dump it all in and let it do its thing. It gets better the longer it sits, which is the opposite of most crockpot meals in my experience.

Serve it with tortilla chips or cornbread and sour cream and call it a win.

Smoked Picnic Shoulder

This one might sound a little extra, but it works beautifully. It is one of the easiest recipes you can make.

When I’ve got a smoked picnic shoulder, the crockpot is great for finishing it off or keeping it warm and tender. The fat content helps prevent dryness, and it shreds easily for sandwiches or plates. It doesn’t need seasoning or anything. I just throw it in the crockpot with a little water and forget it. Cook it all day and it will be fall apart tender.

Why These Work When Others Don’t

If a recipe needs crisp edges, perfect texture, or careful monitoring, the crockpot is not your friend.

But these meals? They’re dependable. And when life is busy, dependable is exactly what I need.

I may never be a crockpot enthusiast, but these few meals have earned their place in our regular rotation, and that’s saying something.
